Wikipedia suggests the surname is of Saxon origin meaning 'the white or fair offspring', with the Saxon suffix "-ing" denoting 'son of' or 'offspring'. Another source links the surname to a marine food fish named Whiting that is found in European waters, especially abundant in the North Sea.
